Vin de Vie Nutty Blue Cheese Delights

A delicious savoury 'adult' dish with WOW factor using Kelman Vineyard fortified muscat Vin de Vie.

INGREDIENTS:

200g soft creamy blue cheese

60g cream cheese

2 tablespoons Kelman Vin de Vie plus a naughty slug for the chef

Herbs of choice: chives, basil, thyme leaves

Nuts of choice: cashews, macadamias, hazelnuts

Pretzel sticks

METHOD: 

  1. Blend the blue cheese, cream cheese, Vin de Vie and herbs.
  2. Taste and adjust as required.
  3. Refrigerate for half an hour.
  4. Blitz the nuts in a food processor and place on a plate.
  5. Using a spoon, form the cheese mixture into small balls and roll in the nuts.
  6. Serving options:
    • Finish with a pretzel stick to serve as a savoury lollipop; or 
    • Place the balls onto a biscuit or other crisp; or 
    • Serve as prepared.

As an alternative, serve the mix as a dip:

Add more cream cheese and Vin de Vie and serve with toasted pita bread.
